I am highly influenced by the things I see, as I'm sure most people are.  One of my favorite blogs around is The Forest Feast, by Erin Gleeson.  Looking through all her photographs makes me swoon, and I find myself daydreaming about packing up all my belongings and moving to the woods like she did.  If anyone would like to transfer my husband's job to the woods of California, I will be more than happy to start packing right now!  I have read her blog from top to bottom and I absolutely love how she writes over the top of her pictures.  I wanted to see if I could do something similar just for the fun of it.  It just so happens that this shaved carrot salad was the perfect candidate for tinkering.

    The idea for this salad was truly a last minute decision based on what was left in my refrigerator.  I didn't have any lettuce to speak of so the task became: how do I make a salad without lettuce?  I starting thinking about shaved salads, which have become quite popular lately.  I did have some carrots so why not?  I figured I could supplement my lack of lettuce with micro greens and I threw in some crunchy green apple which is always in my crisper.  Lately I have been in love with a variety of blood orange called a Moro, which is dark and luxurious with hints of raspberry.  I had an idea to pair the moro juice with balsamic vinegar, and it worked beautifully.  Sometimes lunch just seems to make itself, and it was so delicious that I savored every bite (stopping only once to take a picture before I devoured the rest).

Shaved Carrot Micro Green Salad (Raw and Vegan)

makes 1 serving

Peel and Shave 1 carrot
Julienne 1/2 green apple
slice one small spring onion (or scallion)
cut a handful each of lettuce, beet and amaranth micro greens


Arrange Everything on a plate and drizzle with Blood Orange Balsamic Dressing.

Blood Orange Balsamic Dressing
Juice from 1 blood orange
1 Tablespoon balsamic vinegar
pinch of salt
1 Tablespoon avocado oil


Whisk everything together in a large bowl and drizzle over salad.

OH. MY. WORD. Sandra. Beyond Beautiful. The recipe is wonderful but your photography is truly stunning in its clarity. All of your attention to detail really comes through in this post. You are an artist in every sense. Love how you laid out the recipe instructions by the way - how cool! Is that a wordpress application?

Thanks Kelly, actually it's not a wordpress application because I don't use wordpress. I am actually working on Weebly editor for my site. Placing the words on top of my pictures was actually a Mac Book Pro Preview edit. I love my Mac Book Pro...all I use is iPhoto to process my photos. Maybe I could make things even better if I had some fancy software...but maybe not...sometimes simple is better right ;)

Love how you inlaid text on your photo. How do you do that in Preview? I have a mac and would love to know!! Please share :)

You should totally invest in Lightroom. I used to only use iPhoto as well, but then once I tried Lightroom, could never go back. There are SO many more options.

I totally agree with Kelly. Your work is absolutely stunning! And the lighting- are you the only house on the east coast that gets winter sun?! ;) Just gorgeous. I have a Mac Book Pro too- how do you do this writing thing now? I only use Iphoto as well. I don't know how to use the other stuff! xx

Ok so to insert the writing on your pictures open up one of your pictures in "Preview" and then in the toolbar click on "Tools-Annotate-add text". Click and drag the size box that you want and start typing. To change the color or size go to "Tools-Show Fonts" and that will open a little box so you can change things.

The only thing is that is it very picky...you can only write in a straight line and once you close the picture you can't change the text as far as I know. But fun to play around with without having to buy some expensive software. Have fun!
